Why You’ll Love Berry Baked Oatmeal

Breakfast tends to be the meal that people struggle with to get in enough protein and fiber. This Berry Baked Oatmeal has 32 grams protein and 11.5 grams fiber to start your day right! Protein and fiber keep you full and satisfied.

Greek yogurt, eggs, and egg whites are the main sources of protein. No protein powder needed to make this high protein baked oatmeal! Oats, chia seeds, and berries make it high in fiber. I love using frozen mixed berries that have blackberries, raspberries and blueberries since 1 cup has 7 grams fiber.

I bake this directly in the meal prep containers to save on clean up. If you don’t have oven-safe containers, then you can use an 8×8 or 9×13 inch baking dish.

Ingredients

  • Greek yogurt: provides protein and makes the baked oatmeal moist. It’s an alternative for butter in baked goods. I used nonfat for the nutrient estimates, but any Greek yogurt can be used.
  • Milk: adds liquid to the batter.
  • Eggs: provides fat and protein. Eggs also help bind ingredients together.
  • Egg whites: more protein and liquid for the batter.
  • Maple syrup: makes it sweet. I used a small amount so it is lightly sweetened. If you prefer sweeter, add another tablespoon or two.
  • Vanilla: adds flavor.
  • Oats: the carb source that also provides fiber.
  • Chia seeds: provides omega-3 fats, fiber, and protein.
  • Cinnamon: adds flavor.
  • Baking powder: helps the baked oatmeal rise.
  • Berries: full of antioxidants and high in fiber. I used frozen mixed berries with blackberries, raspberries, and blueberries. Fresh or frozen berries can be used. If using frozen, no need to let it thaw.

How to Make Berry Baked Oatmeal

Preheat oven to 425°F. Grease 4 oven-safe glass meal prep containers (these are the ones I use). You can also use 9×13 inch baking dish.

In a large mixing bowl, add yogurt, milk, eggs, egg whites, maple syrup, and vanilla. Whisk to combine. Then, add oats, chia seeds, cinnamon, and baking powder. Stir to combine.

Evenly divide batter into meal prep containers. Top each with ¼ cup berries (if using frozen, use as frozen, don’t thaw). Bake for 25-30 minutes or until an inserted toothpick comes out clean (if using a baking dish, bake for around 35 minutes).
