Why You’ll Love Cheesy Black Bean Egg Bake

I always try to get in both protein and fiber at breakfast and this Cheesy Black Bean Egg Bake has 30.5 grams protein and 7.5 grams fiber. A high protein and high fiber breakfast will help you feel full and satisfied so you can have a productive morning!

The fiber comes from the black beans and sweet potatoes. The protein comes from the eggs, cottage cheese, beans, and cheese. Salsa and spices make this breakfast very flavorful!

You bake all ingredients directly in the meal prep containers for easy clean up!

Ingredients

  • Sweet potato: the carb source that adds fiber along with vitamins A and C, and potassium.
  • Black beans: adds more fiber and contains potassium and folate.
  • Spinach: rich in iron and zinc.
  • Cottage cheese: makes it cheesy and higher in protein.
  • Salsa: adds great flavor. Use your favorite salsa. I used Trader Joe’s Salsa Autentica.

  • Shredded cheddar cheese: makes it cheesy and delicious plus adds protein.
  • Cumin and black pepper: spices for extra flavor.

How to Make Cheesy Black Bean Egg Bake

Preheat oven to 350°F. Place four oven-safe meal prep containers on a large sheet pan. Lightly grease meal prep containers with oil.

Evenly divide ingredients into containers starting with sweet potatoes in a single layer. Add black beans, spinach, cottage cheese (1/4 cup per container), salsa (1/4 cup per container), eggs (2 eggs per container), and shredded cheese. Lightly sprinkle cumin and ground black pepper on top of each container.
