Get your protein and fiber in with these Beef & Cheese Breakfast Biscuits! The biscuit base is made with Greek yogurt, flour, and ground flaxseed for a nutrient-rich biscuit. Greek yogurt adds protein, and ground flaxseed adds fiber and healthy omega-3 fats. Beef and cheese are added for more protein, and garlic and green onion make them savory.

One of these large biscuits provides 19 g protein and 3 g fiber. I look forward to eating two of these biscuits after my morning workout. That’s 38 g protein and 6 g fiber to start my day off right!

Ingredients

  • Flour: the carb source. I used all-purpose, but any flour should work.
  • Ground flaxseed: adds fiber, omega-3 fatty acids, and offers other health benefits!
  • Baking powder: the rising agent.
  • Garlic: adds flavor. Feel free to add your favorite savory seasoning.
  • Salt: strengthens dough to help with rising and adds flavor.
  • Greek yogurt: adds moisture to the dough and adds a protein boost. Greek yogurt is needed due to its thickness. Regular yogurt will cause the dough to be too sticky.
  • Ground beef: adds more protein, iron, and adds flavor. I prefer to use lean ground beef 90/10 to get a higher amount of protein and less fat from the beef since the flaxseeds and cheese provide fat. You could also use breakfast sausage or any other ground meat.
  • Shredded cheese: adds flavor, calcium, protein, and fat.
  • Green onion:  adds flavor and antioxidants.

  • If the dough is too sticky, just sprinkle some more flour on it and your hands to make it easier to knead.
  • Reheat in toaster oven or air fryer for a nice crispy top.
  • Make a big batch and freeze leftovers to have a high protein breakfast ready whenever you need it!
  • Note that these aren’t as flaky as traditional biscuits because butter isn’t used.
