Why You’ll Love Buffalo Chicken Skillet with Rice & White Beans
Chicken breast and rice is a common healthy meal prep but it doesn’t have to be bland and boring. This Buffalo Chicken Skillet is very flavorful so you’ll be looking forward to eating this each day. It’s high in protein and fiber to keep you full and satisfied.
It’s filled with seasoned chicken for protein; onion, celery, and carrots for vegetables; rice for carbs for energy; white beans for fiber and extra protein; and broth and buffalo sauce for flavor. All prepared in one skillet to make life easier!

Ingredients
- Chicken breast: the main protein source.
- Paprika, garlic powder, and pepper: used to season the chicken breast.
- Olive oil: healthy oil to grease the skillet.
- Onion: for flavor and has antioxidants.
- Garlic: more flavor and antioxidants.
- Celery: adds a little color and fiber. A staple vegetable paired with buffalo wings.
- Carrots: more color and fiber. Often paired with celery.
- White rice: the carb source for energy. I used white rice because it cooks quickly. Brown rice can also be used, but cooking time might need to be increased for it to fully absorb the broth.
- Chicken broth: the flavorful liquid for the rice to absorb.
- Buffalo sauce: the main flavor source for this meal. I usually use Frank’s buffalo sauce.
- White beans: adds fiber and extra protein. Mixes in well with the rice and buffalo sauce.
- Greek yogurt: stirred in at the end to add a little creaminess.
