  • Parmesan cheese: adds traditional Italian flavor. Provides protein and fat.
  • Gnocchi: potato-based pasta. Provides carbohydrates to fuel you.
  • Broccoli: the fiber source. High in vitamin C and a good source of vitamin K and calcium. Make it easy preparation by using precut fresh broccoli.
  • Chicken: the protein source.

How to Make Healthy Chicken Gnocchi Bake

Preheat oven to 375°F. Grease 9 x 13-inch baking pan.

In a food processor, add tomato sauce, cottage cheese, and parmesan cheese. Blend until smooth. Cut chicken into 1-inch pieces.

Add gnocchi to baking pan in a single layer. Cover gnocchi evenly with broccoli. Then, add chicken on top of broccoli. Pour tomato cheese sauce to cover chicken and broccoli.

Bake for 45-50 minutes or until internal temperature of chicken reaches 165°F. Optionally, top with parmesan cheese and oregano prior to eating. Makes 5 servings.
