Why You’ll Love Cinnamon Date Chia Pudding

Fiber is having a moment right now and as a dietitian I am all for it! This Cinnamon Date Chia Pudding is an easy and delicious way to get in a lot of fiber with 18.5 grams per serving! That is about 75% of the amount of fiber women need a day. Plus, this chia pudding is packed with protein at 30.5 grams.

If you love a sweet breakfast, then you’ll want to make this! It’s naturally sweetened with dates and flavored with vanilla extract and cinnamon. Get your fiber, protein, and sweet tooth satisfied all in one delightful chia pudding.

Ingredients

  • Greek yogurt: adds protein and makes a thicker chia pudding, which I prefer.
  • Milk: liquid for chia seeds to absorb. I used 1% dairy milk. Other milks can be used, but will likely lower the protein content. Soy milk is a good non-dairy alternative to keep the protein up.
  • Dates: add natural sweetness and flavor. Dates also provide fiber and potassium. I used Medjool dates.
  • Vanilla extract: adds flavor.
  • Cinnamon: adds flavor.
  • Chia seeds: these little seeds are high in fiber, omega-3 fats, and protein! This Cinnamon Date Pudding is high in fiber with 18.5 grams per serving.

How to Make Cinnamon Date Chia Pudding

In a food processor or large blender, add Greek yogurt, milk (if your blender or food processor has a max fill of 8 cups, only add 2 cups here and then add the other 1 cup of milk after pouring blended mixture into large mixing bowl), dates, vanilla extract, and cinnamon. Blend until smooth (small chunks of dates left are okay).

Pour mixture into a large mixing bowl (if you only blended with 2 cups of milk, now add the remaining 1 cup and stir). Add chia seeds and stir to prevent clumping. Let sit for 5-10 minutes and then stir again.

Then, evenly divide chia pudding into 4 mason jars or another container with lid. Refrigerate for at least 4 hours. Top with fresh fruit or additional chopped dates.

How to Store Cinnamon Chia Date Pudding

Store in individual containers, like mason jars with lids, in the refrigerator to make it easy to have breakfast ready to go on busy mornings. You can also store in a large container with a lid as well. Chia pudding should last about 5 days in the refrigerator.

Tips

  • Enjoy Cinnamon Date Chia Pudding as a high fiber and high protein breakfast or a filling snack. Add additional chopped dates or fresh fruit, like sliced strawberries, on top.
  • Only want to prepare 2 servings? Simply cut the ingredient amounts in half and pour into 2 mason jars.
