Cottage cheese egg bites make a great breakfast for busy mornings. I eat these often on my way to work in traffic. You don’t need a fork to enjoy these eggs. One serving is 3 egg bites and provides 20 grams of protein. The perfect way to get your protein in when you are in a rush.

Cottage Cheese in Eggs?

Trust me, it is delicious! The cottage cheese gives it a cheesy flavor. It is similar to adding shredded cheese to your eggs. If you aren’t a fan of the texture, then try blending the cottage cheese and eggs together.

One serving of cottage cheese egg bites is equivalent to 2 eggs and ¼ cup cottage cheese. That is a small amount of cottage cheese, yet it adds an additional 7 g protein to the eggs.

Mix Up the Vegetables in Cottage Cheese Egg Bites

The recipe calls for bell pepper, mushrooms, and spinach, but you can use any vegetable you like. Eggs are a convenient way to eat vegetables for breakfast. You can also add in bacon and shredded cheese. Mix it up each time you make the recipe to eat a variety of vegetables and prevent your breakfast from becoming boring.

How to Prevent Cottage Cheese Egg Bites Sticking to Pan

Eggs are known to stick to pans. Even if you grease up the pan very well, egg may still get stuck. Silicon muffin cups or muffin pans can help prevent this. There are also higher-grade nonstick muffin pans.

Cottage cheese egg bites can also be made in an 8×8-inch baking pan. Bake for 30-40 minutes or until an inserted toothpick comes out clean. Cut into 4 pieces. To make it easier to travel with like the egg bites, cut the serving into smaller hand-held pieces.

How to Store

I like to store 3 egg bites in a small container to have ready to heat up easily in the morning to take with me to work. Cottage cheese egg bites freeze well. Store in airtight container or plastic bag and place in freezer. If reheating from frozen, then will need to be microwaved for about 2 minutes. I recommend moving bites from the freezer to the refrigerator the night before eating. Microwave for about 1 minute.

  • Cottage Cheese: provides a protein boost along with vitamin B12, selenium, calcium, and folate. I used 2% milkfat.
  • Everything bagel seasoning: makes everything taste delightful. Use any seasoning you like.
  • Bell pepper, Mushrooms, Spinach: the vegetables, but any can be used. Use your favorites. Eggs are a great way to eat vegetables for breakfast. The vegetables were measured whole, then chopped.

How to Make High Protein Cottage Cheese Egg Bites

  1. Preheat oven to 350°F. Grease 12-cup muffin pan or use silicon muffin cups.  
  2. Dice bell pepper and mushrooms. Chop spinach.
  3. Fill each muffin cup with about 2 tbsp. of vegetables. Leave some to add after eggs.
  4. Two ways to add eggs: 1) Mix all eggs and cottage cheese together in a medium bowl with seasoning and divide evenly among all muffin cups, 2) divide 1/4 cup cottage cheese among 3 muffin cups and then pour 2 whisked eggs over those 3 muffin cups, and repeat. Do not overfill as egg may spill over during baking. Leave a little room in the cups. Top with remaining vegetables.
  5. Bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  6. One serving is 3 egg bites, which is equivalent to 2 eggs and ¼ cup cottage cheese.
