Why You’ll Love Cottage Cheese Egg Salad

Eggs are a regular breakfast staple of mine. I like to enjoy them in a variety of ways and this Cottage Cheese Egg Salad is a refreshing change to my usual baked egg dishes. Cottage cheese replaces mayonnaise to make each serving high protein with 22 grams. It’s full of flavor from Dijon mustard, lemon juice, everything bagel seasoning, and dill.

This egg dish elevates plain hard-boiled eggs and is ready in under 10 minutes. It’s perfect for times when you want meal prep to be quick!

Ingredients

  • Hard-boiled eggs: one part of the protein of the dish. Make your own hard-boiled eggs or buy them already prepared.
  • Cottage cheese: the other part of the protein. Cottage cheese is high protein and a good alternative to mayonnaise. I used 1.5% milk fat. Any percentage of milk fat will work for this egg salad.
  • Dijon mustard: adds flavor.
  • Lemon juice: adds acidity and enhances the other flavors.
  • Everything bagel seasoning: a mix of seasonings for flavor. You can also just add a mix of salt and pepper instead.
  • Dried dill weed: adds a fresh and bright taste.
