Why You’ll Love Deconstructed Stuffed Peppers Skillet
I love stuffed bell peppers, but preparing the filling and then baking the stuffed peppers can take a while. These Deconstructed Stuffed Peppers have everything made in the same skillet. You get the same flavors in less time and less work, which is always a win!
This recipe makes 4 servings and each provides 40 grams of protein and 7.5 grams of fiber. A solid meal to keep you full and satisfied. Ground beef provides the protein. Quinoa, bell peppers, onion, and diced tomatoes provide fiber. There is also color from the bell peppers and diced tomatoes which lets you know you are getting in a variety of micronutrients.

Ingredients
- Olive oil: oil used to grease pan and sauté vegetables. You can use your preferred cooking oil.
- Onion: high in antioxidants and adds flavor.
- Garlic: also full of antioxidants and of course adds flavor.
- Bell peppers: instead of stuffing bell peppers, these will be diced and mixed in with the beef and quinoa. Bell peppers provide fiber, potassium, and vitamin C. You can use a variety of colors.
- Ground beef: the protein source. Any lean ground meat can be used.
- Cumin, chili powder, & smoked paprika: all the great flavors!
- Quinoa: the main carb source that also provides fiber and some protein.
- Broth: the flavorful liquid to cook the quinoa. Any type of broth can be used.
- Canned diced tomatoes: creates a tomato sauce and adds a bit of sweetness to the recipe.
- Shredded cheese: I love anything with melted cheese. Shredded cheese on top of this skillet meal is delicious!

My family doesn’t like quinoa. Can I substitute it with brown rice?
Hi Brandy, you can substitute brown rice. Cooking time will likely take a bit longer with brown rice. Just monitor it until rice is fully cooked.
