Why You’ll Love Fall Turkey Skillet with Sweet Potatoes & White Beans
This Fall Turkey Skillet is inspired by Thanksgiving staples with ground turkey and sweet potatoes. It is high in protein from the ground turkey and beans. Sweet potatoes and beans make it high in fiber. Kale adds micronutrients and the spices and herbs add flavor. All made in one pan for an easy high protein and fiber meal prep!
Ingredients
- Olive oil: healthy oil to sauté onion and sweet potatoes.
- Yellow onion: for flavor and antioxidants.
- Sweet potato: the main carb source for energy plus provides fiber, vitamins A and C, and potassium.
- Ground turkey: the main protein source. I chose ground turkey as this was Thanksgiving inspired but any ground meat can be used.
- Garlic: for flavor and antioxidants.
- Thyme, smoked paprika, cinnamon, & black pepper: for flavor. The cinnamon adds a slight sweetness that goes well with the thyme and smoked paprika.
- White beans: adds fiber and extra protein. I used Great Northern beans. Cannellini beans can also be used.
- Chicken broth: for flavor and to soften the sweet potatoes. Water works if you don’t have broth.
- Kale: adds micronutrients including vitamins K and C.
- Apple Cider Vinegar: for flavor.
