Why You’ll Love Baked Greek Chicken

Chicken doesn’t have to be boring! This Baked Greek Chicken has fresh flavor from the lemon and dill, and is marinated and baked to make it tender and juicy.

The marinade consists of a handful of ingredients that you likely already have in your kitchen, except maybe the dill. Don’t skip the dill though because it adds a fresh, Mediterranean flavor. After the chicken marinates, it bakes quickly in the oven.

It makes the perfect protein source for your spring and summer meal preps. Add to salads, like this Greek Lentil Salad or White Bean and Tomato Salad. Pair it with pasta primavera or a lemon pasta dish.

Ingredients

  • Olive oil: healthy fats and balances the lemon juice in the marinade.
  • Greek yogurt: adds creaminess.
  • Lemon juice: the acid for the marinade to soften the chicken and adds flavor.
  • Garlic, dill, & salt: adds flavor! I used dry dill, but fresh dill can also be used. Salt to your preference.
  • Chicken breast: the protein source. I’ve found that marinating chicken breast with lemon or lime juice mixed with olive oil makes the best chicken to me when I bake it.

How to Make Baked Greek Chicken

Prepare Marinade: in a small bowl combine olive oil, Greek yogurt, lemon juice, garlic, dill, and salt. Set aside.

Prepare Chicken: Cut chicken into strips, about the size of a thick finger. Place in a large container with lid or gallon-sized bag. Pour marinade over chicken. Cover with lid or seal bag. Shake to fully cover chicken in marinade. Place in the refrigerator for 30 to 60 minutes.
