Why You’ll Love Ground Beef and Edamame Bowls
Ground beef and rice is a common meal prep to get protein and easy carbs, but we can make it more flavorful and higher in fiber. These Ground Beef and Edamame Bowls are loaded with fiber from edamame, shredded carrots, and brown rice. Each serving has 8 grams of fiber to keep you feeling full longer.
Edamame not only provides fiber, but also adds protein. The lean ground beef and edamame make these bowls high in protein with 38 grams per serving. The bowls come together with a delicious sauce that is flavorful and simple to prepare with a mixture of coconut aminos, rice vinegar, water, sesame oil, and sriracha.

Ingredients
- Brown rice: the carb source for energy that also provides some fiber.
- Coconut aminos, rice vinegar, sesame oil, & sriracha: ingredients for sauce to add lots of flavor to these ground beef and edamame bowls. Coconut aminos are a low sodium alternative to soy sauce.
- Olive oil: healthy fat to grease skillet.
- Ground beef: the main protein source. I use lean or extra lean ground beef to reduce calories coming from fat since the sauce provides fat. Use the beef that you prefer and how it fits with your individual fat needs along with what else you eat in the day.
- Garlic: provides antioxidants and flavor.
- Ginger: adds flavor and provides antioxidant and anti-inflammatory properties.
- Edamame: high in fiber and adds extra protein.
- Carrots: a good source of vitamin A, potassium, and fiber.

Is the rice one cup before or after cooking?
It is 1 cup dry brown rice before cooking. I just added the word dry to the ingredients.
So Edamame, you just use the hard unshelled ones that you buy as a snack? Not the frozen ones, correct?
Hi Janelle! This recipe uses the edamame that is not in the shell that you can find in the freezer aisle, not the crunchy snack edamame. At Trader Joe’s you can also find edamame out of the shell in the refrigerated produce section.
