Ingredients for Ground Beef and Rice Skillet
- Olive oil: healthy fats and polyphenols. Used to sauté the onion. Any cooking oil can be used.
- Onion: adds flavor and rich in antioxidants.
- Ground beef: the protein source. I prefer to use lean ground beef. You can use any ground meat you prefer.
- Garlic, paprika & cumin: add flavor.
- Bell pepper: provides vitamin C and B6, potassium, and fiber.
- Zucchini: contains a variety of nutrients, including fiber, vitamin A, manganese, vitamin C, and potassium.
- Diced tomatoes: are a good source of vitamin C, potassium, vitamin K1, and folate.
- Rice: the carb source to provide energy. I used white rice because it cooks faster. If you use brown rice, cooking time will be longer.
- Broth: adds flavor and the liquid needed to cook the rice.
How to Make Ground Beef and Rice Skillet
In a large skillet, heat olive oil over medium heat. Add onion and cook for about 3 minutes. Add ground beef. Use a wooden spoon or spatula to crumble into small pieces and brown meat.
Add garlic, paprika, and cumin. Stir to combine. Add zucchini, bell pepper, and diced tomatoes. Stir to combine and cook for about 5 minutes.

Add rice and beef broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, stirring occasionally. Liquid should be absorbed and rice fully cooked.

Tips
