Why You’ll Love Ground Beef Quinoa & Broccoli in One Pan

The traditional beef and broccoli dish was my inspiration for this meal. I wanted to make an easy and healthy meal prep version. Lean ground beef is a simple beef to prepare. Coconut aminos is a lower sodium alternative to soy sauce for flavor. Broccoli and carrots add color and fiber. Quinoa is a high fiber carb source. All together these ingredients make a filling and nutritious meal!

I’m always in favor of a meal that can be made in one pan. This Ground Beef Quinoa & Broccoli is all made in one pan to get a high protein and high fiber meal. Each serving provides 39 grams protein and 8 grams fiber.

Ingredients

  • Olive oil: healthy fat to grease skillet.
  • Lean ground beef: the protein source rich in iron and B vitamins.
  • Onion: provides antioxidants and flavor.
  • Garlic & pepper: adds flavor. To make life easier, I like to buy minced garlic that comes in a jar or pre-peeled garlic cloves.
  • Coconut aminos: a lower sodium alternative for soy sauce. This adds flavor to the beef and broccoli.
  • Broccoli: provides fiber and high in vitamins C and K.
  • Carrots: contain fiber and are a good source of vitamins A and K, potassium, and biotin.
  • Quinoa: the main carb source that also provides fiber and protein.
  • Beef bone broth: the liquid to cook the quinoa that also adds flavor. Bone broth is higher in protein compared to regular broth. Regular broth can also be used in this recipe, but the protein will be slightly less.
