Why You’ll Love This Healthy Hamburger Salad

All the flavors of your favorite burger in a big hearty salad with fries and secret sauce dressing included. Salads are easy ways to eat more vegetables, but if they don’t provide enough carbs, fats, and protein, then you’ll be feeling hungry soon after eating. This salad is filling with 36 g protein and 6 g fiber. Ground beef and cheese provide protein and fat, and the roasted potatoes, tomatoes, and lettuce provide fiber.

Easily prepare this healthy hamburger salad in about 30 minutes. You just roast the potatoes, cook the beef, and chop the vegetables. Then assemble with the dressing and enjoy!

The secret sauce dressing is made with Greek yogurt, tomato paste, mustard, pickle juice, lemon juice, garlic powder, and paprika. The pickle juice adds that special touch to taste like you are devouring a good burger.

Ingredients

  • Ground beef: the main protein source and rich in vitamin B12, zinc, and iron. You can use the fat content you prefer. I used 96/4 because it was on sale.
  • Onion: rich in antioxidants.
  • Potatoes: roasted potatoes are the side of fries and a good source of fiber.
  • Cheddar cheese: adds more protein and flavor.
  • Lettuce, tomato, and pickles: the toppings that elevate a burger and make this salad even more filling.
  • Olive oil, Dijon mustard, garlic powder, pepper: add flavor to this delicious salad.
  • Greek yogurt and tomato paste: the base for the secret sauce dressing. Greek yogurt is high in protein and mixes well with the other ingredients for the perfect burger salad dressing.

How to Make Healthy Hamburger Salad

Make potatoes: Preheat oven to 425°F. Dice potatoes into 1-inch cubes. Coat potatoes in olive oil, garlic powder, and pepper. Place potatoes on a single layer on a baking sheet and bake for 30 minutes or until tender, turning halfway.

Cook ground beef: In a medium skillet (cast iron skillet preferred), over medium-high heat, add olive oil and heat until shimmering. Add diced onion and sauté for about 3 minutes. Then, add ground beef and use a wooden spoon to break up into a few large pieces and brown for about 5 minutes. Add garlic powder and Dijon mustard. Break up beef into smaller pieces while it cooks until beef is browned and no longer pink.

Tips

  • To prepare this hamburger salad for meal prep: store produce in one container and ground beef and potatoes in another so that beef and potatoes can be reheated easily.
  • What to do with leftover tomato paste? You can store it in an airtight container in the refrigerator for 5 to 7 days. Use it to make more secret sauce for salad dressings or use as a spread in a sandwich. You can also freeze tomato paste in an airtight container for up to 4 months.
  • Feel free to add more toppings! Add what you love to get on your hamburgers, like jalapeños and avocados.
