Why You’ll Love Healthy Banana Bread Blondies
I love a sweet treat and wanted to make one that is also nutritious. These Healthy Banana Bread Blondies are made from simple ingredients, taste delicious, and provide some protein and fiber.
Sweetened with just mashed banana and topped with chocolate chips. Oats, ground flaxseed, and peanut butter add fiber. Greek yogurt, eggs, and oats provide protein. This recipe makes 8 servings with each providing 7.5 grams protein and 3.5 grams fiber for about 175 calories each.

Ingredients
- Ripe bananas: natural sweetness and provides moisture to create a soft, chewy texture. Also adds potassium and fiber.
- Eggs: adds moisture and richness, while also helps the ingredients hold together. Adds protein.
- Greek yogurt: helps keep the blondies soft, used as a replacement for oil in baking. Also adds protein. I used nonfat, but any Greek yogurt will work.
- Peanut Butter: adds richness, healthy fats, a little protein, and flavor. My favorite peanut butter is from Costco.
- Vanilla: enhances the sweetness without adding sugar.
- Oats: the main structure of the blondies. You can blend the oats if you want it more like flour, but it worked out well using the whole oats. Oats also add fiber and some protein.
- Ground flaxseed: adds fiber and omega-3 fats, while also helping bind the ingredients to create a soft, chewy texture.
- Cinnamon: adds flavor that pairs well with the sweetness of the bananas.
- Baking powder & soda: both are used as they have slightly different roles. Baking soda promotes browning and chewiness, while baking powder provides additional lift, helping to create soft and tender blondies.
- Salt: enhances the flavors of the banana, peanut butter, and cinnamon.
- Chocolate chips: adds sweetness and flavor with the small amount used in this recipe.
How to Make Healthy Banana Bread Blondies
Preheat oven to 350°F. Prepare an 8-inch by 8-inch baking pan with parchment paper (I lightly spray my pan with oil to help the parchment paper stay in place when I pour the batter).
In a large mixing bowl, add banana and mash. Then, add eggs, Greek yogurt, peanut butter, and vanilla. Whisk to combine ingredients.
Add oats, ground flaxseed, cinnamon, baking powder, baking soda, and salt to the banana mixture. Stir to evenly combine ingredients.
Pour batter into prepared baking pan with parchment paper. Top with chocolate chips.

Bake for 20-25 minutes. An inserted toothpick will have a few moist crumbs. Don’t over bake it or it will be dry. Let it cool before cutting.

Tips
- Don’t over bake it or it will be dry. Check doneness by inserting a toothpick. A few moist crumbs mean it is done. Let it cool for about 20-30 minutes before cutting. If you want clean slices, try refrigerating before cutting.
- Store in the refrigerator in an airtight container to keep it fresh longer. Reheat for about 15-20 seconds before enjoying.
