Why You’ll Love Healthy Banana Bread

This is my favorite healthy banana bread recipe that is great for a pre-run or pre-workout snack! Traditional banana bread can be higher in fat, especially for the big slice I want to eat before a run. Eating too much fat before working out doesn’t sit well, which is why I made this banana bread using Greek yogurt instead of butter. It keeps the bread moist with less fat and adds a little extra protein.

ingredients for healthy banana bread

Ingredients

  • Ripe bananas: must have bananas for banana bread! Bananas provide flavor, sweetness, and moisture.
  • Greek yogurt: replaces butter. It adds moisture, reduces the fat, and adds some protein.
  • Eggs: help to bind ingredients together.
  • Maple syrup: for sweetness and flavor. This is lightly sweetened. Adjust the amount to your preference. You can also use honey.
  • Olive oil: a small amount for some fat for a soft texture.
  • Vanilla extract: for flavor.
  • All-purpose flour: makes a soft, moist bread.
  • Baking soda: neutralizes the acidity of the yogurt and bananas to help with a good rise of the bread.
  • Baking powder: adds extra leavening to create a light bread crumb.
  • Salt: enhances the flavor of the bread and helps with the texture.
  • Cinnamon: for flavor.

How to Make Healthy Banana Bread

Preheat oven to 350°F. Grease or line a 9-inch by 5-inch loaf pan.

In a large mixing bowl, mash bananas. Then, add Greek yogurt, eggs, maple syrup, oil, and vanilla. Whisk until well combined.

Add flour, baking soda, baking powder, salt, and cinnamon to mixture. Stir to combine.

Pour mixture into a loaf pan. Bake for 45-55 minutes, or until an inserted toothpick comes out mostly clean. Let cool before slicing.

Tips

  • Add in nuts or chocolate chips, or both! I kept it simple since I like eating it before a run.
  • Store Healthy Banana Bread at room temperature for optimal flavor and texture. Once bread has cooled, store it in an airtight container or wrap it in plastic wrap. It will last 3-4 days at room temperature.
  • If storing in the refrigerator, wrap bread tightly in plastic wrap or keep in a covered container. It will last up to 10 days in the refrigerator.
