Healthy Pumpkin Oat Bars

Ingredients

  • Pumpkin puree: pumpkin is packed with nutrients, including fiber, vitamins A, C, and E, and potassium.
  • Greek yogurt: supports the soft texture, used as a replacement for oil in baking. Also adds protein. I used nonfat, but any Greek yogurt will work.
  • Eggs: adds moisture and richness, while also helps the ingredients hold together. Adds protein.
  • Maple syrup: for sweetness and flavor. ¼ cup for the whole recipe is not a lot, but it added enough sweetness for me along with the chocolate chips on top. You can always adjust per your sweetness preference.
  • Milk: adds moisture and helps create the proper batter consistency.
  • Vanilla extract: enhances the sweetness without adding sugar.
  • Oats: the main structure of the oat bars You can blend the oats if you want it more like flour, but it worked out well using the whole oats. Oats also add fiber and some protein.
  • Ground flaxseed: adds fiber and omega-3 fats, while also helping bind the ingredients to create a soft, chewy texture.
  • Pumpkin pie spice & cinnamon: for the delicious fall flavors. If you don’t have pumpkin pie spice, then you can do a mix of nutmeg, ginger, and cinnamon.
  • Baking powder & baking soda: both are used as they have slightly different roles. Baking soda promotes browning and chewiness, while baking powder provides additional lift, helping the oat bars be soft and tender.
  • Salt: enhances the flavors of the pumpkin and spices.
  • Chocolate chips: adds sweetness and flavor with the small amount used in this recipe. Adjust per your preference.

How to Make Healthy Pumpkin Oat Bars

Preheat oven to 350°F. Prepare an 8-inch by 8-inch baking pan with parchment paper (I lightly spray my pan with oil to help the parchment paper stay in place when I pour the batter).

In a large mixing bowl, add pumpkin, yogurt, egg, maple syrup, and vanilla. Whisk to combine ingredients.

Add oats, ground flax, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Stir to evenly combine ingredients.

Pour batter into prepared baking pan with parchment paper. Top with chocolate chips. Bake for 25-30 minutes. An inserted toothpick will have a few moist crumbs. Let it cool for about 10-15 minutes before cutting.

Tips

  • Add in walnuts for healthy omega-3 fats.
