Ingredients
- Chicken: the protein source.
- Riced cauliflower: I love adding riced cauliflower with rice to add volume and a vegetable! Provides fiber and vitamin C.
- Rice: the carb source for energy. I used white rice because it cooks the quickest. If you use brown rice, then you’ll have to increase the time to 20 minutes.
- Chicken broth: the liquid for the rice and adds flavor.
- Limes: adds sharp, tangy flavor. Provides vitamin C.
- Garlic: full of antioxidants and flavor.
- Cumin and salt: more flavor!
- Cilantro: a refreshing, citrusy herb.

Is brown rice better for you?
Brown rice does have more fiber than white rice. This recipe mixes white rice with cauliflower to add some fiber and micronutrients. You can substitute brown rice though. Brown rice takes longer to cook so you will need to add extra time.
