Why You’ll Love Matcha Baked Oats

If you love matcha lattes, then you will definitely love High Protein Matcha Baked Oats! These baked oats are high in protein with 34 grams per serving from blended cottage cheese, eggs, and egg whites. Maple syrup adds sweetness, while vanilla extract compliments the matcha flavor.

Each serving also has 5.5 grams fiber. Top with raspberries and pomegranate arils for extra fiber and nutrients.

Ingredients

  • Oats: the carb base that has fiber.
  • Cottage cheese: makes these baked oats high in protein. Since the cottage cheese is blended, you can’t taste it. I used 2% fat.
  • Egg whites: adds more protein.
  • Eggs: helps bind all the ingredients together, adds protein and fat.
  • Matcha: rich in antioxidants, including catechins, which have been found to help lower blood pressure and LDL cholesterol. L-theanine is found in matcha and it can improve concentration and alertness.
  • Baking powder: helps the baked oats rise.
  • Maple syrup: adds sweetness.
  • Vanilla extract: for flavor to compliment the matcha.

How to Make Matcha Baked Oats

Preheat oven to 425°F. Place four oven-safe meal prep containers on a baking sheet (or prepare a 9-inch by 13-inch baking pan).

In a food processor, add all ingredients and blend (use 1 to 2 tbsps matcha, for a stronger matcha flavor use 2). Pour batter into meal prep containers evenly. Bake for 25-30 minutes (increase time if using 9×13 pan) or until an inserted toothpick comes out clean.
