Mediterranean Breakfast Bowls

Why You’ll Love Mediterranean Breakfast Bowls

I love Mediterranean meals and often make them for lunch and dinner, but why not also for breakfast? These bowls are filled with Mediterranean staples, including farro, garbanzo beans, cucumber, tomato, and feta. An egg is added for extra protein. Bone broth is used to add flavor to the farro and for more protein.

Each bowl is high in protein and fiber with 29 grams protein and 8 grams fiber. You will be full and satisfied with this breakfast bowl!

Ingredients

  • Farro: an ancient grain that is nutty and chewy. It has similar protein and fiber content as quinoa with 5 grams protein and 2 grams fiber per serving. Farro takes longer to cook, so I used Trader Joe’s 10 Minute Farro.
  • Bone broth: used for the liquid to cook farro to add flavor and extra protein.
  • Garbanzo beans: high in fiber and add more protein.
  • Cucumber: High in vitamin K.
  • Cherry tomatoes: packed with nutrients, including vitamins C and K, and potassium. I used cherry tomatoes as they are easy to cut in half. Other tomatoes can also be used.
  • Feta: adds fat, flavor, calcium, and extra protein.
  • Egg: provides protein, fat, B vitamins, choline, and selenium.
  • Dill: a common herb used in Mediterranean dishes.
  • Olive oil: a staple in the Mediterranean diet. Use as a dressing to add extra flavor these breakfast bowls.

How to Make Mediterranean Breakfast Bowls

Prepare farro according to package instructions using bone broth as the liquid (I used Trader Joe’s 10 Minute Farro).

Assemble four bowls by evenly dividing ingredients so that each contains, farro, garbanzo beans, cucumber, tomato, feta and an egg. Sprinkle dried dill over each. Drizzle olive oil if using.
