Why You’ll Love Mediterranean Chicken Bowls

It has been a dream of mine to visit Greece for years and I finally was able to go on a Greek cruise earlier this month. I had a great time and loved all the food there. When I got back home, I still was craving Greek food so I made these Mediterranean Chicken Bowls.

These chicken bowls are great for meal prep because they are easy to prepare, high in protein, and filled with lots of vegetables. The chicken is seasoned with oregano, thyme, and garlic powder. The cucumber, tomatoes, bell pepper, and red onion make it a filling bowl loaded with nutrients.

Ingredients

  • Rice: the carb source of the recipe. I used white rice, but any rice can be used. I love using a rice cooker so you can just set it and forget it while you prepare the rest of the ingredients.
  • Extra virgin olive oil: used to grease the pan to cook the ground chicken and provides healthy fats.
  • Ground chicken: the protein source that is easy to prepare and keeps the flavor of the herbs well.
  • Garlic powder, oregano, & thyme: add Mediterranean flavors. If you don’t have garlic powder, then use fresh minced garlic.
  • Cucumber, tomatoes, bell pepper, and red onion: fresh Mediterranean classic produce. Feel free to mix it up with your favorite vegetables. I used green bell pepper because when I was in Greece, the classic Greek salad, known as Horiatiki Salata to Greeks, used green bell pepper.

How to Make Mediterranean Chicken Bowls

Prepare rice according to package instructions. I love using a rice cooker so you can just set it and forget it while you prepare the rest of the ingredients.

In a medium pan over medium-high heat, warm olive oil. Then add ground chicken and crumble it using a wooden spoon. Then add garlic powder, oregano, and thyme. Mix ground chicken with seasonings. Cook until no longer pink.

Prepare bowls. This recipe makes 4 servings so evenly divide ingredients into 4 bowls or meal prep containers. Add to each bowl: rice, ground chicken, cucumber, tomatoes, bell pepper, and red onion. You can also add sliced olives and tzatziki.

Tips

  • For meal prep, you can store your rice and chicken separate from your vegetables if you want to reheat. I stored everything together and warmed up my bowl for about 90 seconds to soften and warm the rice and chicken, and I didn’t mind the vegetables being slightly warmed.
