Why You’ll Love Easy Pesto Egg Wrap

Whenever I get breakfast at Starbucks, I always order the Spinach, Feta, & Egg White Wrap so I decided to make a simple version at home! My wrap only needs 4 ingredients and has 30 grams of protein.

I used 3 whole eggs for my Easy Pesto Egg Wrap to get all the nutrients eggs have, and to make the recipe simple. You can use a mixture of whole eggs and egg whites if you prefer less fat.

Ingredients

  • Eggs: provide protein and high in B vitamins and selenium.
  • Feta: adds flavor along with an extra protein boost.
  • Tortilla (10-inch): you’ll need a large tortilla to wrap everything up. I used Trader Joe’s flour tortillas.
  • Pesto: adds lots of flavor. I love using Trader Joe’s Vegan Kale, Cashew, and Basil Pesto. Any pesto will work.

How to Make Easy Pesto Egg Wrap

Heat an 8 or 10-inch skillet over medium heat. Spray with oil or grease. Whisk eggs in a small bowl. Once skillet is warm, add eggs. Allow eggs to spread over the surface of the pan. When eggs are mostly cooked with a little liquid left, flip over. Then, add feta. To help melt feta, use a spatula to press feta down. Once eggs and feta are cooked to your preference, turn off heat.
