Why You’ll Love Easy Pumpkin Blender Muffins
I’m all about pumpkin when its fall, and these muffins are the perfect healthy treat. Oats are the base, making them higher in fiber and protein than most muffins, and they are only sweetened with maple syrup. Simply blend all ingredients and then bake!
Each muffin provides 122 calories, 4.5 grams protein, 20.5 grams carbs, and 3 grams fiber. Enjoy as a pre-workout snack, delightful part of breakfast, or an afternoon sweet snack.

Ingredients
- Pumpkin puree: use 100% pure pumpkin. Pumpkin is rich in vitamin A and contains potassium, fiber, vitamin C, and vitamin B12.
- Milk: adds liquid and provides protein and calcium. I used 1% fat. Plant-based milks can also be used.
- Eggs: binds ingredients together and adds protein.
- Oats: acts as the flour and provide fiber and some protein.
- Baking powder: helps the muffins rise.
- Pumpkin pie spice and cinnamon: provides the delicious fall flavors.
- Maple syrup: the sweetness! Use pure maple syrup, not pancake syrup.
