Why You’ll Love Quinoa Rice & Beans

Fiber is important for gut health and helps keep you feeling full longer. Women and men need around 22-34 grams of fiber per day. This dish makes it easy to get in fiber with 7.5 grams per serving.

Only four ingredients are needed: quinoa, brown rice, bone broth, and white beans. If you like the fluffy texture of rice more than the texture of quinoa, then you’ll love mixing the two together so you can enjoy the fluffiness from the rice along with the extra fiber and protein from the quinoa. White beans add more fiber and protein, and bone broth adds even more protein.

This side dish is quick to prepare because all you have to do is add everything to the rice cooker and cook!

Ingredients

  • Quinoa: carbs for energy and contains protein and fiber.
  • Brown rice: also carbs for energy. Contains a little protein and fiber. White rice can also be used since the quinoa and white beans provide a majority of the protein and fiber in the dish.
  • Bone broth: provides collage and is higher in protein than regular broth. Also adds flavor. Chicken or beef broth works well.
  • White beans: high fiber and has protein. White beans are mild in flavor so they mix well with the quinoa and brown rice. White beans, like Great Northern beans, have more fiber than garbanzo beans.

How to Make Quinoa Rice & Beans

In a rice cooker pot, add quinoa and rice. Wash as you normally would and drain. Then add bone broth and stir. Add beans.

Close rice cooker and cook. Once done, enjoy!

What to Pair with Quinoa Rice & Beans

This is the perfect side dish to any protein source. It has flavor from the bone broth and it pairs well with many options:

The bone broth adds flavor, but when I pair it with ground beef I like to also add salsa for even more flavor all together.

How to Store

Store in an airtight container in the refrigerator for about 4 days. It can also be frozen for around 3 months.
