Ingredients

  • Riced cauliflower: easy way to add in a vegetable and fiber to rice. Also adds volume to keep you satisfied! I used Via Emilia’s riced cauliflower that I found at Costco.
  • Rice: the carb source for energy. I used white rice. If you use brown rice, then it may need a couple more minutes to fully cook.
  • Chicken broth: adds flavor. You can replace with water if you don’t have chicken broth.
  • Cumin and chili powder: adds extra flavor! This can be optional since salsa will add plenty of flavor, but I love the added kick of spice with these.
  • Chicken breast: the protein source.
  • Salsa: use your favorite to make the rice and chicken flavorful!
