Why You’ll Love Shrimp Burrito Bowls

Chipotle and Rubio’s are my go-to restaurants when I need a quick healthy meal. I love burrito bowls because they have a mix of everything and provid protein, fiber, and carbs. These Shrimp Burrito Bowls taste like what you would get from your favorite burrito bowl place.

Shrimp is a quick cooking protein. Chili powder, paprika, and cayenne pepper make this shrimp so flavorful. You can easily adjust the spice level to your preference.

Using canned black beans and frozen corn pack in fiber while requiring minimal preparation.

Ingredients

  • Rice: carbs to provide energy. You can use white or brown rice.
  • Shrimp: the protein source that cooks quickly! I use frozen and let it thaw overnight before cooking.
  • Chili powder, paprika, cayenne pepper: the seasonings to add the perfect flavor combo for the shrimp.
  • Olive oil: healthy fats to cook the shrimp.
  • Black beans: provide fiber and protein.
  • Tomato: adds fiber, folate, potassium, and vitamins C and K.

How to Make Shrimp Burrito Bowls

Prepare rice following package instructions or use rice cooker.

In a small bowl, mix together chili powder, paprika, and cayenne pepper. Pat dry shrimp. In a medium-sized bowl, add shrimp and spice mix. Stir to evenly coat shrimp.

In a large skillet over medium heat, add olive oil. Add shrimp in a single layer and cook for about 3 minutes, then turn shrimp over and cook for another 3 minutes, or until internal temperature reaches 145°F.

If preparing for meal prep, evenly assemble four bowls with rice, black beans, corn, shrimp, and diced tomato. You can use frozen or canned corn. Both will heat up when meal prep meal is reheated prior to eating. Make Avocado Cilantro Sauce to mix in bowls.

If eating right away, heat up beans and corn before eating following package instructions.

  • Don’t like beans or corn or tomatoes? Switch it up! You can mix in riced cauliflower or add broccoli to get in fiber. Eat over a bed of your favorite greens. Build your burrito bowl how you like it.
