Why You’ll Love Shrimp Rice and Peas

One of my main goals with meal prep is to use the least amount of dishes so clean up is quicker. This Shrimp Rice and Peas meal is all made in one skillet. I also try to make my meals high in both protein and fiber. Shrimp is the main protein and carrots, peas, and brown rice provide fiber. Each serving has 29.5 grams protein and 7 grams fiber.

This recipe is inspired by shrimp fried rice. Coconut aminos and garlic add great flavor. You can always add in an egg if you want!

Ingredients

  • Olive oil: healthy fat to coat the pan and cook shrimp.
  • Shrimp: protein source that cooks in about 5 minutes!
  • Black pepper & garlic powder: seasonings for shrimp.
  • Lemon juice: flavor for shrimp.
  • Garlic: flavor for rice and vegetables.
  • Carrots: high fiber vegetable plus has vitamin C and vitamin A
  • Rice: the carb source for energy. I used brown rice to get extra fiber.
  • Coconut aminos: lower sodium alternative to soy sauce.
  • Peas: high fiber and protein vegetable. Frozen peas and canned peas can be used.
