Why You’ll Love Southwest Chicken Pasta Salad
Pasta salads are one of my favorite summer lunches and they are usually easy to prepare. This Southwest Chicken Pasta Salad uses a mix of fresh and canned ingredients to make it a quick recipe.
It is also high in protein and fiber with 46 grams protein and 14 grams fiber. Chicken, chickpea pasta, beans, and the Greek yogurt dressing make it high in protein. The chickpea pasta, black beans, corn, bell pepper, and tomato make it high in fiber. A delightful and satisfying lunch!
Ingredients
Greek Yogurt Dressing
- Greek yogurt: creamy high protein base for dressing. I used 0% fat since I mix in olive oil. You can use your preferred yogurt.
- Olive oil: healthy fats and has polyphenols.
- Lime juice: thins out the consistency of the dressing and adds flavor.
- Cumin & chili powder: for spice and flavor.
Pasta Salad
- Chickpea pasta: to add extra protein and fiber. I tried Trader Joe’s Chickpea Fusilli Pasta for the first time this week. It was pretty good. You can use any high protein pasta you like. Even if you use regular pasta, this meal will still be high in protein and fiber.
- Chicken breast: the main protein source. I used canned chicken since to save time. Costco’s chunk chicken breast is my favorite canned chicken because it stays moist.
- Black beans: provide fiber and extra protein.
- Corn: more fiber and has B vitamins and potassium.
- Bell pepper: adds a crunch and vitamin C.
- Tomato: provides potassium and vitamins C and K.
