Why You’ll Love Southwest Chicken Salad

You need to have tasty quick high protein lunch options in your rotation for those weeks when you have minimal time to prepare meals. This Southwest Chicken Salad is part of my quick meals because it is easy to make and I look forward to eating it!

Greek yogurt is used for a high protein creamy base. Canned chicken makes prep super quick. Costco’s canned chicken is my favorite because I have found others can be dry. Black beans, corn, bell pepper, and red onion and nutrients and crunch. Spiced and lime juice add flavor. This makes 4 servings with each providing 30 grams protein and 3 grams fiber.

Ingredients

  • Greek yogurt: high protein creamy base alternative to mayo. I used plain, nonfat Greek yogurt.
  • Lime juice: added for the flavor.
  • Chili powder, cumin, & paprika: southwest spices for flavor.
  • Chicken: the protein source. To make it quick, I like to use canned chicken. Costco’s canned chicken is my preferred choice because the chicken is moist unlike other brands I have tried that are dry. You can also prepare your own shredded chicken.
  • Black beans: add fiber and protein. Since I used a can of black beans and only ½ cup is needed for the chicken salad, I used the rest along with leftover corn and red onion to make a bean salad.
  • Corn: adds fiber. Use leftover for the bean salad.
  • Red bell pepper: adds a crunch plus fiber.
  • Red onion: additional crunch and antioxidants.
