Why You’ll Love Southwest Quinoa Salad

I’m all for one pot meals to make meal prep and the clean-up easy. This Southwest Quinoa Salad is cooked in one skillet and ready in 30 minutes. The Chipotle Lime Dressing is quickly made in a blender and adds more delightful flavor!

Enjoy this salad for a tasty way to eat fiber as each serving has 13 grams. You’ll also get in 20 grams of protein. It’s a healthy meal prep meal you’ll love! For additional protein, I like to pair this salad with shrimp. I cooked a pound of shrimp following this shrimp recipe and reduced the spice amounts in half.

Ingredients

ingredients: cumin, chili powder, canned black beans, canned corn, quinoa, red bell pepper, chicken broth on kitchen counter

Southwest Quinoa Salad

  • Olive oil: you can use your favorite cooking oil to grease your skillet. I like to use olive or avocado oil for healthy fats.
  • Garlic: adds flavor and contains antioxidants.
  • Bell pepper: high in vitamin C and provides fiber.
  • Black beans: adds protein and fiber. I use canned beans for convenience. I usually go for the low sodium option. Draining will help reduce the sodium content.
  • Corn: provides fiber and B vitamins. Use canned or frozen to make this an easy recipe.
  • Quinoa: a grain with fiber and protein. Quinoa is a soft, light grain that is a nice change from always using rice in meal preps.
  • Chili powder & cumin: makes it flavorful! You can adjust the amounts to your preference.
  • Broth: the liquid for the quinoa to absorb. I used chicken broth, but you can use any type of broth.

Chipotle Lime Dressing

  • Greek yogurt: a high protein base for the dressing.
  • Chipotle pepper: you just need one pepper to give this dressing strong flavor. You can find canned chipotle peppers in adobo sauce in your local grocery store or get it from Amazon here.
  • Garlic powder & paprika: more flavor.
  • Lime juice: thins the Greek yogurt and adds flavor. Adjust the amount of juice per your preference for thickness of dressing.
