This Steak Bites and Potatoes recipe includes carrots and mushrooms for a high protein and high fiber meal prep made quickly in the instant pot.

Why You’ll Love Steak Bites and Potatoes
I’m all for easy meals where you toss everything in and let it cook. This Steak Bites and Potatoes recipe is a dump and cook meal that is high in protein and fiber to keep you full and satisfied. The carrots and mushrooms add a variety of micronutrients to give your body what it needs.
Each meal provides 28.5 grams protein and 10 grams of fiber. Potatoes are one of my favorite carbs because they are high in fiber. Roasted potatoes are delicious, but that can take a long time to prepare. This recipe just needs 15 minutes of pressure cooking.

Ingredients
- Sirloin steak: the protein of the meal. Steak also provides several nutrients, including vitamin B12, zinc, niacin, and iron. Sirloin is a lean cut, which can become dry if cooked for too long. Pressure cooking for just 15 minutes will allow the steak to stay tender and juicy.
- Beef broth: liquid needed for pressure cooking and adds flavor.
- Coconut aminos: adds flavor. Less sodium than soy sauce. You can also substitute for soy sauce.
- Garlic & black pepper: adds flavor.
- Potatoes: provides fiber along with carbs for energy. I used baby Dutch yellow potatoes because they are quick to clean and cut into quarters. Any potato will work.
- Carrots: Adds color and micronutrients, including potassium and vitamins A and C. I used rainbow carrots for a mix of colors, but all orange carrots will also work.
- Mushrooms: more fiber and micronutrients, including selenium, thiamin, and magnesium.
