Healthy Strawberry and Cream Cheese Muffins

Ingredients

  • Strawberries: adds sweetness, good source of fiber and folate, and rich in vitamin C.
  • Ripe banana: adds sweetness and good source of fiber and potassium.
  • Greek yogurt: adds protein and good source of calcium
  • Milk: adds liquid to the batter. I used almond milk but any milk can be used. Dairy milk will add more protein.
  • Eggs: provide protein and bind everything together.
  • Oats: flour alternative and provides fiber and carbs.
  • Whipped cream cheese: gives the cheesecake taste. Lighter and easier to mix than regular cream cheese. Find it at Trader Joe’s.
  • Vanilla extract: adds flavor.
  • Baking powder: helps the muffins rise.

How to Make Healthy Strawberry and Cream Cheese Muffins

Preheat oven to 375°F and prepare 12-cup muffin pan with silicone cups or grease.

In a large mixing bowl, mash banana. Add ½ cup of diced strawberries and mash.

Add milk, yogurt, eggs, and vanilla. Mix well.

Add oats and baking powder. Stir to combine.

Add remaining 1 cup of diced strawberries. To evenly distribute whipped cream cheese, add in small dollops. Fold in strawberries and cream cheese.

Pour batter into muffin cups. Bake for 25-30 minutes.

How to Store Healthy Strawberry and Cream Cheese Muffins

Store in an airtight container in the refrigerator for up to 5 days. Muffins freeze well. Allow muffins to thaw overnight in the refrigerator.
