Ingredients
Corn & Beef Skillet
- Olive oil: healthy fat to sauté onion and garlic.
- Onion: provides antioxidants and flavor.
- Garlic: more flavor and antioxidants.
- Ground beef: the main protein source. I use lean or extra lean ground beef to reduce calories coming from fat since the cheese provides a good amount of fat. Use the beef that you prefer and how it fits with your individual fat needs along with what else you eat in the day.
- Cumin, chili powder, & smoked paprika: spices for flavor.
- Bell pepper: very rich in vitamin C and provides folate and vitamin E.
- Corn: the main carb source that is high in fiber. Also provides potassium, niacin, and magnesium.
- Black beans: more fiber plus extra protein.
- Cotija: known as the Parmesan of Mexico. Used to top elote and esquites.
Greek Yogurt Sauce
- Greek yogurt: high protein base for a creamy sauce.
- Lime juice: adds flavor and thins out the Greek yogurt.
- Chili powder & smoked paprika: spices to add flavor to the creamy sauce.
How to Make Street Corn Beef Skillet
In a large skillet over medium heat, warm olive oil. Add onion and cook for about 3 minutes. Then, add garlic and cook for 30 seconds.
Add ground beef and break up into pieces. Cook for about 6-8 minutes or until beef is mostly browned, then add cumin, chili powder, and smoked paprika. Stir to evenly coat beef.
Add bell pepper, corn, and beans to skillet. Stir to combine. Cook for about 5 minutes, or until bell pepper softens to your preference (if using frozen corn, cook until corn is cooked through).
Turn heat off and stir in Cotija cheese. In a small bowl, combine Greek yogurt sauce ingredients. Stir in Greek yogurt sauce to skillet. Enjoy!
