Preparing this recipe directly in the individual containers makes it the best meal prep hack. You will save time on cleaning up a baking dish and cutting up the sweet potato and egg bake to fit into the containers. It is my new favorite way to meal prep breakfast bowls.

Sweet Potato Breakfast Bowl is high in protein and fiber to keep you feeling full and satisfied. Each meal contains 30 g protein and 6 g fiber. Eggs are an easy way to eat more vegetables that contain a variety of nutrients that provide great benefits to our bodies. The perfect breakfast that is ready to eat in the morning or easily take with you to work.

Cottage Cheese in My Eggs?

It might sound strange, but it is delightful. You can’t tell there is cottage cheese. It tastes cheesy and adds protein. The ¼ cup of cottage cheese per serving adds 7 g protein. With all of the vegetables and shredded cheese, you won’t even notice the cottage cheese. If you are concerned about the texture, then you can always blend cottage cheese before adding to the eggs.

Ingredients

  • Eggs: a breakfast staple that provides protein, iron, and vitamins A, D, E, B12, and folate.
  • Cottage Cheese: adds a protein boost and adds a cheesy flavor. Provides vitamin B12, calcium, and folate.
  • Sweet Potato: provides fiber, potassium, and vitamins A, Bs, and C. You can also use regular potatoes.
  • Mushrooms, Bell Pepper, and Spinach: breakfast bowls are an easy way to eat more vegetables. Use your favorites. Mushrooms provide vitamin D, zinc, and potassium. Bell peppers are high in vitamin C. Spinach provides zinc and iron.  
  • Shredded Cheese: cheese just makes everything better. Also adds more protein!

How to Make Sweet Potato Breakfast Bowl Meal Prep

Preheat oven to 350°F. Grease 4 oven-safe meal prep containers and place on a sheet pan.

Wash and peel sweet potato. Chop sweet potato into small ½ inch pieces. Small pieces will ensure the sweet potato will be cooked through.  

Dice mushrooms. Chop spinach.

Evenly divide sweet potatoes among meal prep containers. Add mushrooms and spinach.

For eggs, you can either whisk 2 eggs and ¼ cup cottage cheese and add to each container or whisk all 8 eggs and 1 cup cottage cheese together and evenly divide among containers.

Add Everything Bagel seasoning or salt and pepper to taste.

Evenly divide shredded cheese to top each container.

Bake for 35 minutes or until inserted toothpick comes out clean.
