The Viral Hot Honey Beef Bowl with sweet potatoes and cottage cheese is popular for a reason! It’s delicious, high in protein and high in fiber. I added roasted Brussel sprouts for more vegetables.

Why You’ll Love the Viral Hot Honey Beef Bowl
Ground beef and sweet potato bowls are a classic meal prep that I always enjoy, but these bowls are leveled up. The cottage cheese and avocado add creaminess, and the hot honey adds a spicy sweetness. A tasty combination when all mixed together!
I added roasted Brussel sprouts and onions to the viral recipe to add more vegetables for extra fiber and nutrients. I like using Trader Joe’s shaved Brussel sprouts for easy preparation.
Each bowl provides 40 grams protein and 12 grams fiber for a filling and satisfying meal!
Ingredients
- Sweet potatoes: the high fiber carb source that also provides potassium, vitamin A, and vitamin C.
- Brussel sprouts: added for more vegetables. Brussel sprouts are rich in vitamin K and C, and provide folate and fiber.
- Onion: more veggies and provide antioxidants.
- Ground beef: the protein source. You can use any ground meat.
- Cottage cheese: adds creaminess and tastes great once all ingredients are mixed together before eating. Cottage cheese adds more protein!
- Avocado: healthy fats and high in fiber.
- Hot honey: adds sweetness and spice.
- Chili powder, cumin, salt, & pepper: flavor!
How to Make the Viral Hot Honey Beef Bowl
SWEET POTATOES & BRUSSELS:
Preheat oven to 425°F. Prepare large sheet pan with silicone baking mats, oil, or foil. Add sweet potatoes to pan. Drizzle 2 tsp olive oil, cumin, and chili powder. Roast for 20-25 minutes. Take sheet pan out. Turn over sweet potatoes and make room to add Brussel sprouts. Drizzle 1 tsp olive oil, salt, and pepper over Brussels and mix. Roast for about 15 minutes or until roasted to your preference.

GROUND BEEF:
In a skillet over medium heat, add oil. Then add onion and cook for about 3 minutes. Add ground beef and brown. Use wooden spoon or spatula to crumble into small pieces. Add cumin and chili powder and mix in.

ASSEMBLE BOWLS:
Evenly divide ground beef, sweet potatoes, and Brussel sprouts to make 4 servings. Serve each with ½ cup cottage cheese, ~1/3 to ½ avocado, and 2 tsp hot honey. Enjoy!

Tips
- Add any vegetables you like! Bell peppers and zucchini would work well.
- For meal prep, store beef, sweet potatoes, and Brussel sprouts in a container on their own so it can be reheated before adding cottage cheese, avocado, and honey.
