Why You’ll Love Walnut Date Bites

Walnut date bites are perfect for when you want something sweet, but also nutritious. Dates are high in fiber and walnuts are a good source of healthy omega-3 fatty acids. You’ll enjoy a delightful treat while also getting good nutrients.

One bite is less than 100 calories and provides 1.5 g fiber and 1 g protein. Eat two bites and you’ll get the same amount of fiber as a small banana. One walnut date bite provides 11.5 g carbs, making it a good pre-workout snack. I work out early in the morning and don’t have time for a full breakfast beforehand. These bites are my go-to pre-workout snack to provide a quick source of energy.

Adding chocolate to walnut date bites makes a delectable treat. I enjoy these as a snack when I need an afternoon sweet energy boost.

Ingredients

  • Dates: delicious natural sweetness and provides fiber.
  • Walnuts: provide omega-3 fatty acids, protein, and fiber.

How to Make Walnut Date Bites

Add dates and walnuts to food processor. Cover with lid and blend for about 3 minutes or until mixture can be easily formed into balls and does not crumble.

Use a tablespoon to scoop up mixture, place in hands and roll to form a ball. Yields 14 balls. Walnut date bites can be eaten right away. To make more firm can freeze for 30 minutes.

To make chocolate walnut date bites: Prior to freezing, flatten balls in muffin cups. Silicon muffin cups make it easier to remove. Freeze for at least 30 minutes. In a microwave safe bowl, melt desired amount of chocolate chips by microwaving in 30 second increments. Stir each time. Evenly pour over walnut date bites. Freeze for about 30 minutes.

When I make these, I keep half as balls and add chocolate to the other half. I use ½ cup of chocolate chips. I like to add a little bit of olive oil with the chocolate chips to help it melt without burning. Coconut butter works well also.
