Why You’ll Love White Bean Chicken Chili

Chili is an easy meal to get in both protein and fiber. This White Bean Chicken Chili mixes up the traditional beef and tomato-based chili, yet still provides a high protein and fiber meal.

Chicken is the main protein source, but the beans add extra protein. Fiber comes from the beans and corn. Each serving provides 39 grams protein and 10 grams fiber. There’s lots of flavor in this dish from the chiles, spices, and broth. All ingredients are added to the instant pot for an easy meal to prepare.

Ingredients

  • Olive oil: oil for sautéing the onion and garlic.
  • Onion: filled with antioxidants and provides flavor.
  • Garlic: more antioxidants and flavor.
  • Chicken breast: the main protein source of the meal.
  • White beans: the main fiber source of the meal that also adds protein along with folate, iron, potassium, and magnesium.
  • Corn: provides more fiber and filled with nutrients including carotenoid, an antioxidant that lowers inflammation in the body.
  • Green chiles: adds spice to the chili.
  • Cumin, chili powder, & paprika: lots of flavor and spice.
  • Broth: the liquid for the chili and adds flavor. I used chicken broth. Bone broth can also be used to add extra protein.
